El Taco H and my call to… Register to Vote!!!! Let Your Voice Be Heard!!!!!!!

Alright now!  I get it.  If I need to enter with an incline, I must begin on the Speedy’s Convenience and Spirit Shop end of the sidewalk.  Conveniently, not a problem.  I will typically take the challenge of climbing the curb but…the accessible side of the walkway is there for us and “MUY GOOD” awaits.

But before we enjoy the delights of El Taco H, in an election year that has made many of us want to pull the sheets over our heads and ignore, our votes cannot be more important.  We have heard and watched the unspeakable but unless we use our opportunity to vote we risk alienating perhaps ourselves and many other fellow Americans.  If you are reading this now you have the capability to register to vote online.  Do it now and insure your voice is counted, whomever your chosen candidate is.  Make your choice known…

img_20160602_183854943Back to good food, comfortable places, and welcoming folk.  El Taco H is another great tiny restaurant in St Joseph, Missouri.   A small space on the side of Speedy’s Convenience Store this restaurant serves up some big flavor seasoned with warm hospitality.  Two years ago when Jose R. Cardenas opened El Taco H, it was more than convenience that Speedy’s provided.  If you ordered a cup of coffee one of the family ran next door to Speedy’s to bring  you, fresh, hot coffee.  Not having a coffee pot did not stop the day to day business of making  great, authentic, south Texas, Mexican food.  A grateful patron soon bought El Taco H a commercial coffee pot and the business continued to thrive.

img_20160602_183525370Hailing from Laredo, Texas, Mr. Cardenas and his family are examples of hard working Mexican Americans that have relied upon our American insistence to provide and grow equal opportunity.  Their simple menu with complex flavors provides excellent food beginning at 7 am until close.  A fresh salsa bar allows you to dip up tiny containers  of salsas to dress their good food.   Tacos, Burritos, Tortas, Tostadas, Nachos and more are all prepared under your eager eye if you choose to watch through the open kitchen window. Eat in or carry out but know there will be a long line if you arrive too late on a Saturday morning.

Now, if you have not registered to vote in your state do it… NOW!  Check online to discover your state’s filing deadline.  Check your voter registration deadlines at http://www.rockthevote.com.  Be sure your opinion is counted.
